Fall is my favorite season. Is there anything that screams autumn more than caramel-dipped apples?! I’m kicking it up a notch by rolling the warm caramel in crushed chocolate chip cookies and then topping it with melted chocolate.

When I was thinking about ice cream sandwiches, I really wanted to make the ultimate version that contained all my favorite things—salty pretzels, smooth Nutella, cool vanilla ice cream, and, of course, chocolate chip cookies. These are just plain fun and the perfect treat to keep stored in your freezer. 

I don’t like to choose favorites, but this pie recipe is one of my best to-date. The caramel filling is simple to make (just make sure you stir it during the baking process to prevent burning), the bananas add a smooth buttery texture and, oh, did I mention the chocolate chip cookie crust? All my favorite flavors combined.
